2025 Estate Chardonnay
This Chablis-inspired wine is made from our Estate single clone Chardonnay. Hand picked on September 3rd, yielding 2 ton/acre. The grapes were whole cluster pressed and fermentation started with a classic Burgundy yeast. The wine was fermented and aged in stainless steel and 6 year old neutral French Oak, with 3/4 of the wine completing malolactic fermentation.
Appearance: Light gold colour, reflecting the wine's young age and minimal oak influence.
Nose: Elegant with a focus on the minerality and classic Chardonnay fruit characteristics. Look for notes of citrus and green apple, hints of white flowers, wet stone minerality.
Palate: Light-bodied, fresh and with vibrant acidity. You will pick up lemon, green apple, and mineral notes. The finish is crisp and clean, leaving a refreshing aftertaste with a lingering hint of minerality.
Food pairings: grilled white fish, lemon yogurt Greek chicken, Délice de Bourgogne cheese, or lemon garlic prawns.
