2023 Estate Chardonnay
Rated 91 Points by Carl Boucher, this Chablis-inspired wine is made from our single clone Chardonnay. Hand picked on Sep 13th, yielding 1.5 ton/acre. The grapes were whole cluster pressed and fermentation started with a classic Burgundy yeast. The wine was fermented in stainless steel and aged in 2nd fill Sirugue French Oak, with 2/3 of the wine completing malolactic fermentation. Bottled on June 17, 2024.
Appearance: Light gold colour, reflecting the wine's young age and minimal oak influence.
Nose: Subtle and refined with a focus on the fruit. Look for classic notes of citrus and green apple, with hints of white flowers and a touch of minerality.
Palate: Medium-bodied, fresh and vibrant with crisp acidity. You will pick up lemon, green apple, and nuances of tropical fruit like pineapple. The finish is crisp and clean, leaving a refreshing aftertaste with a lingering hint of minerality.
Food pairings: lemon yogurt marinated Greek chicken off the barbeque, Délice de Bourgogne cheese, or grilled shrimp Caesar Salad.
