Hand picked on September 3rd, yielding 2 ton\/acre. The grapes were whole cluster pressed and fermentation started with a classic Burgundy yeast. The wine was fermented and aged in stainless steel and 6 year old neutral French Oak, with 3\/4 of the wine completing \u003cmeta charset=\"utf-8\"\u003emalolactic fermentation. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAppearance:\u003c\/strong\u003e Light gold colour, reflecting the wine's young age and minimal oak influence.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eNose:\u003c\/strong\u003e Elegant with a focus on the minerality and classic Chardonnay fruit characteristics. Look for notes of citrus and green apple, hints of white flowers, wet stone minerality. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003ePalate: \u003c\/strong\u003e Light-bodied, fresh and with vibrant acidity.
