2021 Estate Pinot Noir
This is a blend of our four Pinot Noir clones: Dijon 115, Dijon 777, Pommard 91 and Ancestor 01. Each clone was picked separately between Sept 16-25, yielding less than than 1 ton/acre. The grapes were destemmed and whole berry fermentation started in open top fermenters with a Burgundian yeast. Aged 1 year in French oak, 25% new. Unfined and lightly filtered.
Classic Burgundian profile. On the nose: Fresh dark cherries, cherry pie with baking spice and a rich meatiness too. There's a hint of smokiness that adds to the complexity. On the palate: notes of rhubarb, cherries, and pie crust
